This soup with deliciously creamy Monterey Jack cheese had us hooked. This soup is full of flavor and almost has a Mexican feel to it thanks to the onions, chiles, and tomatoes. This soup is thickened and made incredibly hearty by making a roux and adding the cheese. Tasty throughout the year!

A tasty and creamy dish ideal for a cold evening is Monterey Jack cheese soup. This is an easy recipe to prepare it:

Ingredients:

  • Four tsp unsalted butter
  • One tiny onion, chopped finely
  • two minced garlic cloves
  • 1/4 cup of flour for all purposes
  • Four cups of vegetable or chicken stock
  • One cup of half-and-half
  • One tsp of Worcestershire sauce
  • One tsp Dijon mustard
  • 1/4 tsp cayenne (optional, for added heat)
  • One-fourth teaspoon of paprika
  • To taste, add salt and black pepper.
  • Three cups of Monterey Jack cheese, shredded
  • Green onions or chopped chives, as a garnish (optional)
  • Two cups of whole or 2% milk

Instructions:

  1. Melt Butter: Melt the butter over medium heat in a big pot or Dutch oven.

  2. Sauté Onion and Garlic: Add the minced garlic and chopped onion to the pot and cook for 3 to 4 minutes, or until the ingredients are soft and fragrant.

  3. Add Flour: Over the onion and garlic mixture, sprinkle the flour and stir continuously for one to two minutes, or until the flour is cooked. This will aid in the soup's thickening.

  4. Pour in the milk and chicken or vegetable broth gradually, stirring continuously to prevent lumps.

  5. Simmer: Once the mixture reaches a simmer, turn down the heat. Simmer, stirring from time to time, for approximately ten minutes or until slightly thickened.

  6. Add the seasonings and half-and-half. Add the cayenne pepper (if using), Dijon mustard, Worcestershire sauce, and half-and-half.
